I have the best baby.. and that isn't up for debate

I am so lucky to have such an easy going baby, I think if I had a fussy crank pot, I may not have more kids. This morning when Aaron left for work around 8, he went in to take a peek at little O and he was just laying there with his hands up just looking around! He started making pleasant noises and was content there from when Aaron left till 8:30 (because I stayed in bed).

He is just so happy all the time and hardly ever cries.. he does however grunt about 50% of the time he is awake.

We took a quick trip up to Courtney's on Tuesday because Aaron had to take some pictures of homes up north for insurance purposes. It's fun to have family all over the PNW so we can make pleasure out of business. It was a bit of a long day for everyone, but totally worth the adventure.

I love when he gets a little sweaty during his naps. He still smells delicious 

I am a little hesitant for when he starts rolling over and setting him down in places like this won't be able to happen :/

I remember the first couple weeks after he was born and thinking "how will I ever leave the house again!" I'm so glad for that time to be over and have the confidence to be able to start planning fun things again. Such a big transition, but it is totally worth every second! He is starting to be easier to schedule and can go anywhere from 2-3 hours between feedings depending on our plans. It's nice to be able to keep him content and not have to stress about a strict schedule or having to feed him every time he cries. Thank goodness for pacifiers! He absolutely LOVES bath time and is so relaxed and happy to be warm:) He also likes the sound of the shower and is content in his bouncer just staring at the shower curtain.. YAY for being able to shower during the day! He goes to bed around 10:30-11 and sleeps 6 hours and then another 2 usually! He's perfect. We love him. and I can't imagine what it was like without him anymore.

Lasagna Roll Ups

I got a great recipe from a friend that I thought I'd share. Olive Garden is probably my favorite restaurant and I love finding recipes similar to theirs. This one isn't supposed to be a fake one but it reminds me of the Lasagna Rollata Al Forno that they recently took away :(


Filling:
2C Ricotta cheese
1 egg beaten
1/2 C Parmesan Cheese
1 pkg. Spinach chopped, thawed & drained
1/8 tsp Nutmeg (optional)

Also need:
8-10 cooked lasagna noodles
Enough Pasta Sauce to cover

Boil Noodles till completely done
(If there are any hard parts they will get really crunchy)
 Mix the filling ingredients together
(My change of the recipe is going to be more cheese, less spinach. Maybe even adding a few different cheeses. It was very spinach-y).
 Coat the bottom of the pan with sauce
Put filling on noodles and roll up
(I used a little too much filling, I only made 8 Rolls and it would be better to use the amount to fill 10)







Then top with remaining sauce and BAKE 375 for 30-40 mins


ALSO, I would lay the rolls on their side so you can cover completely with the sauce. My noodles got a little hard on the sides that weren't covered in sauce.

Next time I make this will be a definite success!!!

This is such a fun time, he's starting to focus really well and enjoyed the play mat this morning for an hour!

Recent Discovery

I've never been very interested in cooking. As a matter of fact, I've never even had much of an interest in food in general. I never go to restaurants and dissect the recipes, I just eat what I'm in the mood for and if I don't gag and get enough calories, then woo hoo another one bites the dust.

I felt terribly sorry for the man I convinced to marry me and my future posterity that I figured I better learn some go-to impressive meals before Oakley gets old enough to understand that I suck. Every mom is a good cook right?

So first things first, I jumped over to Pinterest and printed some recipes that sounded easy enough, but homemade and tricky looking so I can fool the in-laws when they come for dinner and so they don't feel just as sorry for Aaron as I do.

I made a shopping and meal list for the week and I'm here to report that is is Friday and I'm still kicking strong! I also have to admit that I am partially enjoying it. I realized the reason for hating making dinner in the past is dishes. I absolutely hate doing all the dishes, and you have to do them EVERY SINGLE DAY (because I'm OCD and have to have clean and clear counters before I go to bed). I just need to get over it. They take me 10 minutes max and whats that compared to the hours of tv I sit on my butt and watch everyday while I feed my precious little baby. I can do it. 

Here's what we had:

Monday: Aunt Sue Burrito Casserole with chips and freshly made guac/salsa
Tuesday: Chicken and Gnocchi Soup via Pinterest (Olive Garden fake recipe.. turned out delish!)
Wednesday: Breakfast for dinner, Fancy Eggs, Waffles, and Fruit
Thursday: Aaron's brothers birthday dinner so I didn't actually cook

and right now I'm working on THESE breadsticks, and Lasagna Roll Ups, a recipe I got from a lady in my old ward. 

and to come we have:
Homemade Pizza (yumm) and smoothies
Baked Mac n Cheese
and I believe that once a week you MUST eat a Baked Potato (and my husband agree's, that's why we're married)

It's so hard for me to get out of the loop of the same meals but my goal is to try a new recipe once a week and roll from there. I am determined.

In other news. I'm up to date with my Project Life 365 and I'm really enjoying it. I am so excited to see where the rest of the year takes us. I'm going to start having to get more and more creative. Also it will be fun to look back and see little O growing up.

Talk about 1000x better than where we were! I love having a place I want to invite people over to. A place that Oakley can play on the floor and not feel like he needs a bath, and a place that in the first five minutes felt like home. I'm in love and I can't wait to start decorating and collecting all the little things a real house needs. It will make the buying of a house a much better transition.

My Crazy Little Family

We get the opportunity to bless Oakley this Sunday! We have tons of family coming to hang out and spend Sunday with us.

So what do we do?

We move!

Yes, Aaron likes to keep me on my toes. We found a new renter for our apartment (in less than 12 hours) and they wanted to take over our lease ASAP. Our new home is available now, so what the heck! add it to our weekend plans.

Along with moving comes all the tedious things like moving internet over, changing our address, sorting out the mail, and all that other crap. So that being said, I probably won't be blogging much. The next post I make will be photo's of our new home though I promise! It's amazing, brand new, which means everything is CLEAN!! I can organize, we have a garage (so all Aaron's "stuff" can be out of my sight) and the space is perfect for our crazy little family
